Paloma Cocktail Jello Shots


Who knew jello shots could be beautiful and taste good?  How lovely would these be to serve at a birthday party, a bachelorette party, bridal shower or even a wedding reception.

Recipe:

  • 1 1/3 cup grapefruit soda (we used Izzy's sparkling juice)
  • 2 tablespoons frozen limeade concentrate (thawed)
  • 2 envelopes Knox gelatin
  • 2/3 cup agave tequila
  • Fresh grapefruit segments for garnish, if desired
  • Recommended Pan:  1-pound loaf pan (approximately 8” x 4”/20 x 10 cm) or flexible silicon molds

Pour soda and limeade concentrate into a small saucepan and sprinkle with the gelatin. Allow the gelatin to soak for a minute or two. Heat over very low heat until gelatin is dissolved, stirring constantly, about 5 minutes. Mixture may be foamy initially, but this will disapate. Remove from heat.  Stir in the tequila. Pour mixture into loaf pan or molds. Place in refrigerator to set (several hours or overnight).

To serve, cut into desired shapes (or unmold).  Garnish each jelly shot with a small grapefruit segment, if desired.

Makes 18 to 24 jelly shots.

Bacon, Apple & Brie Panini Sandwich


Bacon, Apple & Brie Panini Sandwich is a fabulous treat for lunch or dinner. Trader Joe's recipe is easy and delicious.

  • 2 slices Trader Joe's Italian Country Loaf or Panini Roll, sliced lengthwise
  • 2 tbsp TJ's Butter, room temperature
  • 1 tsp TJ's Whole Grain Dijon Mustard (optional)
  • 6 strips TJ's Brie Cheese, thinly sliced
  • 1 TJ's Fuji Apple, sliced thin
  • 4 strips TJ's Applewood Smoked Bacon, cooked

Heat grill pan or Panini press to medium-high. Butter one side of each slice of bread or the outsides of two panini roll pieces. If including, spread mustard on the unbuttered side of one slice of bread or roll. Place three strips of brie cheese on the un-buttered side of both pieces of bread or roll. Place thinly sliced apple on one piece of bread atop brie. Top with four strips of bacon. Put the two sides together and place into a panini press or in a grill pan and press down. Grill until lightly browned on both sides. Serve at once.

Serves: 2
Cooking Time: 10 Minutes

PS:  We also made this with turkey instead of bacon and it is yummy!

Halloween Candy Corn Sugar Cookies


Cute and easy, Candy Corn Sugar Cookies don't need rolling, a cookie cutter or frosting.

Easy Toffee Recipe


Toffee is one of my favorites and this recipe is as fabulous as it is easy!

3/4 cup brown sugar (packed)
1/2 cup butter
1 cup chopped walnuts
1/2 cup semi sweet chocolate chips

Grease a 9 x 9-inch cake pan. Spread the chopped walnuts evenly in the bottom of the pan. Over high heat, melt together sugar and butter in medium size saucepan until boiling. Lower heat to medium. Boil over medium heat for 7 minutes. Pour into pan. Sprinkle chocolate chips over hot mixture.

Place a cookie sheet over the pan to retain the heat and melt the chocolate chips. Cut into squares while hot, then refrigerate until hard. Break into pieces.

Note: Yield depends on how large you break the pieces.
