I love one-pot and crock pot meals that are easy and tasty. This Crockpot Salsa Chicken recipe has another advantage in that most of the ingredients can usually be found in your pantry to throw together anytime. The seasonings can also be adapted or changed to what you like or what you have on hand.

1 pound boneless skinless chicken breasts
1 can cream of mushroom or cream of chicken soup
1 cup salsa
1 package taco seasoning
1 cup sour cream (can use nofat or light)
Cilantro, for topping (optional)
Avacado, for topping (optional)
Shredded cheese, for topping (optional)
Chopped onions, for topping or cook with other ingredients (optional)

Put chicken, soup, and salsa in slow cooker. Sprinkle taco seasoning over everything. Cook on low for 6 hours. If shredding the chicken, pull the breasts out and shred; return back to slow cooker. Stir in sour cream and heat just until everything is combined. Top with shredded cheese, cilantro, avacado, onions, hot sauce, lime wedges. Enjoy!

2 ripe avocados
1/2 cup honey (preferably raw)
1/4 cup cocoa powder
Dash of cinnamon

Directions:

Beautiful Quinoa Salad Recipe

If you're like most people, eating healthy is probably number one or two on your New Year's resolution list. Here's a healthy and beautiful Quinoa Salad Recipe that also tastes great!

Ingredients:

1 cup quinoa
1/2 cup sweet corn (fresh, frozen or canned)
1/4 cucumber
1/2 red onion
5 sundried tomatoes
1 lemon
1/2 tsp dijon mustard
1 tsp cider vinegar
1 tbsp extra virgin olive oil
pinch organic unrefined sugar
salt and pepper
handful finely chopped dill
handful of radish sprouts (or alfalfa etc.)

Directions:

In a pot add 2 cups of water to the quinoa. Bring to a boil, cover and then gently simmer until all the water has absorbed. Transfer to a plate and set in fridge to cool.
Finely dice the red onion. Skin and de-seed the cucumber and cut into small chunks. If you’re using fresh sweet corn, take it off the cob using a knife and blanche the kernels for a few minutes. If using frozen, place them in a bowl, cover with freshly boiled water, drain and rinse. If using canned simply rinse. Cut the sundried tomatoes into small pieces. Set all ingredients aside.
In a clean empty jam jar (remember, don’t throw these things away they come in very handy!) add the mustard, sugar, salt and pepper, vinegar, lemon juice, extra virgin olive oil and dill. Screw the lid on tightly and give it a vigorous shake.
Take the quinoa out of the fridge and carefully mix through all the ingredients. Pour over two thirds of the dressing and give it a gentle, coaxing stir. Serve in a bowl, topped off with the sprouts and using the remaining dressing to drizzle over the top.

8 oz Seagram's Escapes Margarita

4 oz Cranberry juice

1/4 cup fresh Lime Juice

Salt (optional)

Rosemary (optional)

Directions:

Moisten top of glass with lime juice and lightly dip in a plate of salt, if desired. Mix the cranberry juice, lime juice and ice together in a cocktail shaker until chilled, then pour into glass. Trader Joe's Rumble Cakes

1 stick TJ's Unsalted Butter
2 TJ's Eggs
1 box TJ's Truffle Brownie Mix
1/4 cup TJ's Dried Tart Montmorency Cherries
1/4 cup TJ's Walnut Halves and Pieces
1 box TJ's Frozen Chocolate Chip Cookie Dough

Preheat the oven to 350°. Bring the butter to room temperature and combine the eggs with the butter and whisk/ mix. Slowly add in the brownie mix. Once the mixture is uniform, add in the cherries and walnuts; set aside. Lightly grease a brownie pan and place the chunks of cookie dough sporadically around the bottom of the pan (there may be a few pieces of cookie dough left, do with them what you must). Pour the brownie mix over the top, evenly coating the cookie dough. Cover with aluminum foil and bake for 45 minutes or until you can stick a toothpick in the center and it comes out clean. Enjoy!

Skinny Layered Apple Pie Recipe

Oh my, I have to try this! I was going to make it for Thanksgiving, but I don't think I can wait. Instead of the calories of a traditional pie crust, the baked cinnamon and sugar wontons are the perfect replacement. They look pretty, they are flakey and delicious, and are only 20 calories each! Add a little whip cream (low calorie, fat free or regular) and cinnamon, and you have all the taste of a classic apple pie without the calories!

Ingredients For Pastry Layers:

12 wonton wrappers
1/2 tsp cinnamon
1/2 tsp sweetener of choice

Ingredients For Apple Pie Filling:

2 large granny smith apples (or other baking apple of choice), peeled, and diced into small chunks
1 tbs lemon juice
2 tbs honey
1/2 tsp cinnamon
1/2 tsp apple pie or pumpkin pie spice
pinch of salt
2-3 packets of favorite sweetener, (or to taste)
Optional: 1(8 oz) Container Fat Free or Light Cool Whip

Directions:

Preheat oven to 400 degrees. Line baking sheet with parchment paper, or foil sprayed with non-stick cooking spray.
Lay wonton wrappers out individually on baking sheet. Sprinkle with cinnamon and sweetener.
Bake for 10-15 minutes, or until wontons have crisped, and become lightly golden brown. Remove from the oven, let cool completely on baking sheet.
Meanwhile, to make the apple pie filling, Place all of the ingredients in a small sauce pan, and cook over medium heat, until apples are soft and resemble the appearance of apple pie filling, stirring constantly, (about 2-5 minutes). Remove from heat.
To build the layered apple pie, start by placing one baked wonton on a plate, and layer with about 2 tbs apple pie filling in between each layer, (alternating with cool whip if desired). Repeat layers 2 more times, (baked wonton will be the top layer, and three wontons will be used for each tower).
Top with Cool Whip and cinnamon if desired~ Served best warm!

Weight Watchers Points Plus Value: 4 pp each (or 6pp each with cool whip)

Fill a mixing glass with ice and pour in:

1 ounce of 1800 Reposado Tequila
¼ ounce of crème de casis (a blackcurrant-flavored liqueur)
1 ounce of apple cider
¼ ounce of lemon juice

Shake the mixing glass to blend and then strain the drink into a Collins glass.

Garnish it with a slice from a crisp apple.

I swear the main reason we go to Olive Garden is for their salad dressing. Here's a copycat recipe that just might have you staying home more often.

2 envelopes Good Seasonings Italian Dressing, prepared
1/2 cup olive oil
1/4 cup white wine vinegar
1 teaspoon dried Italian spices
1 teaspoon salt
black pepper
1 teaspoon sugar
1/2 teaspoon garlic powder
1 tablespoon mayonnaise
3 tablespoons water

Prepare the two envelopes of Good Seasonings Italian Dressing as per the package directions
Combine all other ingredients in a blender on high until combined, about 30 seconds.
Add the prepared Good Seasonings Italian Dressing to the blender ingredients and pulse til blended.
Pour into a bowl or carafe and cover and refrigerate until ready to serve.
Stir before serving.

Recipe does make a ton of dressing.

Hot Spinach and Artichoke Dip is easy to prepare ahead of time, then throw it in the oven when you are ready to eat. Serve with Pretzel Crisps or baked chips. No one will know this is a light recipe.

Ingredients:

13.75 oz artichoke hearts packed in water, drained
10 oz frozen spinach, thawed and squeezed
1/4 cup chopped shallots
1 clove garlic
1/2 cup fat free Greek yogurt
1/2 cup light mayonnaise
2/3 cup Parmigiano Reggiano
4 oz shredded part skim mozzarella cheese
salt and fresh pepper to taste
olive oil spray

Directions:

Preheat oven to 375°.
In a small food processor, coarsely chop the artichoke hearts with the garlic and shallots.
Combine all the ingredients in a medium bowl. Place in an oven-proof dish and bake at 375° for 20-25 minutes, until hot and cheese is melted. Serve right away.
Can be made one day in advance and stored in the refrigerator before baking. Makes about 3 3/4 cups.

Paloma Cocktail Jello Shots

Who knew jello shots could be beautiful and taste good? How lovely would these be to serve at a birthday party, a bachelorette party, bridal shower or even a wedding reception.

Recipe:

1 1/3 cup grapefruit soda (we used Izzy's sparkling juice)
2 tablespoons frozen limeade concentrate (thawed)
2 envelopes Knox gelatin
2/3 cup agave tequila
Fresh grapefruit segments for garnish, if desired
Recommended Pan: 1-pound loaf pan (approximately 8” x 4”/20 x 10 cm) or flexible silicon molds

Pour soda and limeade concentrate into a small saucepan and sprinkle with the gelatin. Allow the gelatin to soak for a minute or two. Heat over very low heat until gelatin is dissolved, stirring constantly, about 5 minutes. Mixture may be foamy initially, but this will disapate. Remove from heat. Stir in the tequila. Pour mixture into loaf pan or molds. Place in refrigerator to set (several hours or overnight).

To serve, cut into desired shapes (or unmold). Garnish each jelly shot with a small grapefruit segment, if desired.

Makes 18 to 24 jelly shots.

Pink Grapefruit Margaritas Recipe

Liven up your party or your weekend with refreshing Pink Grapefruit Margaritas. Would be a fabulous choice for a bachelorette party, bridal shower or lady's birthday party cocktail. Super simple to make, but you do need fresh limes as it really makes a difference.

1 cup ruby red grapefruit juice
1/2 cup fresh squeezed lime juice (about 4 limes)
1 cup triple sec orange liqueur
3 cups ice
1 cup silver tequila
1 lime cut in wedges, optional Kosher salt

Combine the grapefruit juice, lime juice, triple sec and ice in a blender. Pour into a large pitcher (or just keep it in the blender) and pour in your favorite silver tequila, stir. If you don't like them slushy, just pour into glass over ice cubes.

If you prefer to rim the glasses take a lime wedge and rim, then dip in salt, if you do not like a salted rim sprinkle a touch of salt in each glass, the salt really brings out the flavor. Makes 4 drinks.

My son loves Tortilla Soup and I'm not a big fan of cooking, so we adapted this recipe we found on Food.com and made it last night. It appealed to me with the time saving use of condensed soups. It's cheesy, creamy and a little spicy, and you'll love it! My son ate two bowls and even took the photo for this recipe!

Ingredients:

2 (10 3/4 ounce) cans Campbell's Cream of Mushroom Soup
2 (10 3/4 ounce) cans Campbell's Cream of Chicken Soup
2 (10 3/4 ounce) cans Campbell's condensed cream of celery soup
2 (10 3/4 ounce) cans Campbell's cheddar cheese soup
2 (15 ounce) cans chicken broth
1 (15 ounce) cans diced tomatoes
1 cup picante salsa ( Pace brand medium hot)
1 (4 1/2 ounce) cans green chilies ( Ortega brand)
1 medium onion, chopped
4 fresh garlic cloves, minced
1 teaspoon red new mexico chile powder ( NOTE -- This is not the same as ordinary red chili powder. It can often be found in specialty foods)
salt and pepper to taste
4 cooked chicken breasts, cut into small chunks (or use canned chicken)
Tortilla chips
1/2 cup fresh cilantro, chopped
1/2 lb shredded colby cheese or Mexican cheese blend
Avocado (sliced or diced)

Directions:
In a large (8-10 quart) stockpot, combine and whisk together until smooth all eight cans of soup. Add chicken broth. Add tomatoes, salsa, green chilies, onion, garlic, chile powder, salt and pepper. Bring all ingredients to a full boil, reduce heat, and simmer for 1 hour. (We've done it for only 1/2 hour and still great). Add chicken. Simmer another 1/2 to 1 hour.

To serve: Ladle soup into bowls, top with shredded cheese, crumbled tortilla chips, chopped cilantro, and avocado.

Baked Skinny Chicken Milanese with Arugula Salad

This looks fabulous for lunch or for dinner. Served with the salad on the side, even the kids will love it.

Ingredients:

24 oz (3) boneless skinless chicken breasts, sliced in half lengthwise
1 -1/4 cups seasoned breadcrumbs
olive oil spray
1/4 cup egg beaters or egg whites, beaten
kosher salt
fresh pepper
2 tbsp balsamic vinegar
1 tbsp olive oil
3 medium tomatoes, diced
6 cups baby arugula or baby mixed greens
1/4 small red onion, sliced thin
1 tbsp chopped fresh basil

Directions:

Preheat oven to 425°. Line baking sheet with tin foil for easy clean up.

Beat egg and milk in a bowl. Fill another bowl with breadcrumbs. Pound chicken breast into thin cutlets, you should have 6. Season chicken with salt and pepper. Dip in egg allowing excess to drip off, then into breadcrumbs, pressing firmly to adhere. Place chicken on baking sheets and spray lightly with olive oil spray on both sides. Bake chicken, turning once halfway for about 15 minutes.

Meanwhile, in a bowl, whisk olive oil and balsamic; season with salt and pepper. Add tomatoes and onion and toss. Let sit 5 minutes. Just before chicken is ready, toss tomatoes with mixed greens. Top chicken with salad and serve with lemon wedges on the side.

Bacon, Apple & Brie Panini Sandwich is a fabulous treat for lunch or dinner. Trader Joe's recipe is easy and delicious.

2 slices Trader Joe's Italian Country Loaf or Panini Roll, sliced lengthwise
2 tbsp TJ's Butter, room temperature
1 tsp TJ's Whole Grain Dijon Mustard (optional)
6 strips TJ's Brie Cheese, thinly sliced
1 TJ's Fuji Apple, sliced thin
4 strips TJ's Applewood Smoked Bacon, cooked

Heat grill pan or Panini press to medium-high. Butter one side of each slice of bread or the outsides of two panini roll pieces. If including, spread mustard on the unbuttered side of one slice of bread or roll. Place three strips of brie cheese on the un-buttered side of both pieces of bread or roll. Place thinly sliced apple on one piece of bread atop brie. Top with four strips of bacon. Put the two sides together and place into a panini press or in a grill pan and press down. Grill until lightly browned on both sides. Serve at once.

Serves: 2
Cooking Time: 10 Minutes

PS: We also made this with turkey instead of bacon and it is yummy!

Toffee is one of my favorites and this recipe is as fabulous as it is easy!

3/4 cup brown sugar (packed)
1/2 cup butter
1 cup chopped walnuts
1/2 cup semi sweet chocolate chips

Grease a 9 x 9-inch cake pan. Spread the chopped walnuts evenly in the bottom of the pan. Over high heat, melt together sugar and butter in medium size saucepan until boiling. Lower heat to medium. Boil over medium heat for 7 minutes. Pour into pan. Sprinkle chocolate chips over hot mixture.

Place a cookie sheet over the pan to retain the heat and melt the chocolate chips. Cut into squares while hot, then refrigerate until hard. Break into pieces.

Note: Yield depends on how large you break the pieces.

1 loaf Trader Joe's Crusty French Bread, torn into pieces
6 TJ's Eggs
1/4 cup Trader Joe's Milk
1 cup Trader Joe's Spicy Italian Chicken Sausage (pre-cooked), sliced (or TJ's Veg. Sausage-less Sausage)
1 cup Trader Joe's Monterey Jack Cheese, grated

Trader Joe's Spices (optional)Preheat oven to 350° and grease baking pan with your choice of oil or butter. Place bread pieces in pan and distribute evenly. Beat the eggs, milk and any spices you desire (salt, pepper, garlic powder...) and pour over the bread. Add the remaining ingredients and bake for 25 minutes or until top is golden brown and a knife put in the center comes out clean. Let sit for 5 minutes before serving (oh, you can wait). Enjoy.

At Christmas, our company sponsored a local young couple with five children and another baby on the way. On a Saturday afternoon, my mother, sister, husband and I delivered two carts of groceries and an artificial Christmas tree complete with lights and decorations to the delight of some very excited youngsters.

It was so rewarding to see them clapping their hands and jumping around with joy with each trip we took to bring everything in from our cars. My mother immediately held the attention of the one-year old girl and passed out green-frosted Christmas tree cookies. My sister took pictures of all the activity and my husband set up the Christmas tree and helped the children decorate it.

The oldest boy asked me, "Are you the lady that brought us all these presents?" as he pointed to the pile of gifts we had delivered earlier in the week for their parents to see and wrap for their children. It made my heart smile to say, "Yes, I'm one of those ladies."

Before we left, they all proudly lined up in front of their Christmas tree and smiled for our final picture. What a wonderful day!

Halloween Superstitions: Black Cats

Black Cats are a favorite Halloween superstition and we try not to cross paths with them, if possible, to avoid bad luck. It's believed this superstition goes back to the Middle Ages and began with people believing witches could turn themselves into black cats to avoid detection. It was also thought that witches could do this nine times, so the "cat has nine lives" tale began.

Do you believe black cats on Halloween are bad luck? The USA and Canada do, but in Britain and Ireland, it's a white cat that's unlucky to cross your path and a black cat is considered lucky.
